(Low-Carb High-Quality) – The Low-Carb Zucchini Salad with Mozzarella is a simple low-carb salad that’s quickly prepared and does not need a lot of ingredients – maybe you even have most of it in stock. This healthy, light meal is great for hot days, but is otherwise a perfect starter or dessert.

Ingredients

  • 500 g zucchini
  • 15 g olive oil
  • 2 tbsp. lemon juice
  • chili flakes to taste
  • salt & pepper to taste
  • 5 leaves of basil
  • 125 g mozzarella
  • 17.6 oz zucchini
  • 0.5 oz olive oil
  • 2 tbsp. lemon juice
  • chili flakes to taste
  • salt & pepper to taste
  • 5 leaves of basil
  • 4.4 oz mozzarella

Directions

1.

Preheat oven to 180°C / 355°F (circulating air) or 200°C / 390°F top / bottom heat.

Cut the zucchinis lengthwise into strips and place them on a cooking grid.


3.

Bake the zucchini strips in the preheated oven for about 10 minutes until soft. Then put the strips in a bowl.


4.

Mix the dressing for the salad. Mix the olive oil with the lemon juice in a bowl and season the mixture with the chilli flakes, salt and pepper to taste. Cut the basil leaves into small pieces and add them to the dressing as well.


5.

Mix the dressing carefully with the zucchini strips.


6.

Finally, decorate the salad with the diced mozzarella and season the dish with pepper to taste.
