For the bread:

  • 20 g ground almonds
  • 25 g sunflower seeds
  • 5 g psyllium husks
  • 5 g crushed linseeds
  • 10 g ground chia seeds
  • salt
  • 60 ml water

For the topping:

  • 3 strips bacon
  • 1 egg
  • 1 tsp. butter
  • 50 g avocado
  • 30 g tomatoes
  • salt
  • pepper

For the bread:

  • 0.7 oz ground almonds
  • 0.9 oz sunflower seeds
  • 0.2 oz psyllium husks
  • 0.2 oz crushed linseeds
  • 0.4 oz ground chia seeds
  • salt
  • 2.1 fl oz water

For the topping:

  • 3 strips bacon
  • 1 egg
  • 1 tsp. butter
  • 1.8 oz avocado
  • 1.1 oz tomatoes
  • salt
  • pepper

Directions

Preheat oven to 180°C / 355°F (circulating air) or 200°C / 390°F top/bottom heat.

Prepare the bread first. Mix the dry ingredients in a bowl: the ground almonds, the sunflower seeds, the psyllium husks, the linseeds, the ground chia seeds, the water and a pinch of salt. Stir or knead the ingredients into a firm dough carefully.

Let the dough rest for about 5 minutes. Then make a small round flatbread. Bake the bread on a baking sheet lined with parchment paper in a preheated oven for about 30 minutes.

While the bread is baking, prepare the toppings. Cut the avocado into strips and the tomatoes into slices.

Fry the 3 strips of bacon in a pan without oil. Remember to turn them over so they are crispy on both sides.

Drain the bacon strips on kitchen paper. Now dedicate yourself to the culmination of this dish: the fried egg! The bacon has previously lost enough fat to fry the egg in the pan. Do it until the egg reaches the desired consistency.

Set aside the pan, remove the finished bread from the oven and butter it.

Now add the cold toppings! Cover the bread with avocado strips and tomato slices.

Top it off with the bacon and fried egg at the end. Salt and pepper to taste and this incredibly appetising breakfast is ready. Enjoy! 🙂
