  • 200 g snow peas
  • 200 g carrots
  • 200 g bell pepper, color of your choice
  • 200 g crème fraîche
  • 150 g grated Gouda cheese
  • 100 g butter
  • 100 g ground almonds
  • 50 g coconut flour
  • 10 g psyllium husks
  • 1 tbsp. tarragon
  • 1/2 tsp. nutmeg
  • salt & pepper to taste
  • 3 eggs
  • 7.1 oz snow peas
  • 7.1 oz carrots
  • 7.1 oz bell pepper, color of your choice
  • 7.1 oz crème fraîche
  • 5.3 oz grated Gouda cheese
  • 3.5 oz butter
  • 3.5 oz ground almonds
  • 1.8 oz coconut flour
  • 0.4 oz psyllium husks
  • 1 tbsp. tarragon
  • 1/2 tsp. nutmeg
  • salt & pepper to taste

Directions

1.

Mix the ground almonds, coconut flour and psyllium husks in a large bowl. Add one of the eggs and the butter.

Season with a pinch of salt and knead well with the dough hook or hand.

Fill the dough either into a tart pan, a round baking dish or alternatively a springform lined with parchment paper. I used a springform with a diameter of 26 cm (10.2") for this recipe.

Distribute the dough on the ground and press it into shape. Preheat oven to 160°C / 320°F top / bottom heat.

Wash the snow peas thoroughly in cold water and remove the stems. Wash the bell pepper, remove the stalk and core and cut it into strips. Brush the carrots and cut them lengthwise into strips.

Bring a pot with plenty of water to a boil and cook the snow peas and carrots with a tsp. of salt for about 3 to 4 minutes. Add the bell pepper strips for another minute.

Then drain the vegetables through a sieve.

Scramble the remaining two eggs in a bowl, add the crème fraîche, 100 g (3.5 oz) of the grated Gouda cheese, the tarragon, the nutmeg, salt and pepper to taste and mix everything.

Put about half of the Crème fraîche mix into the mold on top of the dough, then evenly distribute the vegetables.

Add the remaining Crème fraîche mixture and sprinkle the rest of the Gouda cheese on top.


7.

Bake the tart until the Gouda is crunchy on top. That takes about 40 minutes. Let the tart rest briefly after baking.

Cut the tart into pieces and serve. Enjoy!
