Ingredients

MetricImperial
  • 100 g almonds ground
  • 50 g coconut flour
  • 10 g psyllium husks
  • 3 eggs (size M)
  • 100 g butter
  • salt
  • clarified butter (ghee)
  • 400 g fresh sausage
  • 1 red onion
  • 500 g sauerkraut
  • birch sugar (xylitol)
  • pepper
  • 200 g sour cream 14%
  • 150 g Emmental cheese grated
  • 3.5 oz almonds ground
  • 1.8 oz coconut flour
  • 0.4 oz psyllium husks
  • 3 eggs (size M)
  • 3.5 oz butter
  • salt
  • clarified butter (ghee)
  • 14.1 oz fresh sausage
  • 1 red onion
  • 17.6 oz sauerkraut
  • birch sugar (xylitol)
  • pepper
  • 7.1 oz sour cream 14%
  • 5.3 oz oz Emmental cheese grated

Directions

1.

Preheat oven to 160°C / 320°F (circulating air) or 180°C / 355°F (top / bottom heat).

2.

Mix the ground almonds, coconut flour and psyllium husks in a large bowl. Add one of the eggs to the mixture, also add the butter.

Season with a pinch of salt and knead well.

3.

Fill the dough either into a tart pan, a round baking dish or alternatively a springform lined with parchment paper. For example, I used a springform with a diameter of 26 cm (10.2") for this recipe.

4.

Roast the sausages with some ghee in a pan evenly from all sides until crisp. Then slice the fried sausages, set aside.

5.

Cut the red onion into rings and fry until glassy, then add the sauerkraut and cook for about 10 minutes.

6.

Sweeten the sauerkraut with some birch sugar (xylitol) and season with salt & pepper to taste. Stir carefully, then fill the sauerkraut and onion mixture into a mixing bowl.

7.

Now add the sour cream, 2 eggs and 2/3 of the grated Emmental cheese and stir all the ingredients.

8.

Now it's time to add the sausages. Mix everything one last time.

9.

Now cover the cake base with the prepared mixture and sprinkle everything with the remaining grated Emmental cheese.

Bake the cake in the preheated oven for about 35 minutes - done!
