Unfortunately, noodles are the biggest carbohydrate bombs of everyday life. That’s why we thought of a fantastic alternative! In this recipe, we’ll show you how to make low-carb noodles with a deliciously creamy mushroom-tomato sauce.

Ingredients
For the Pasta:
- 50 g sunflower seeds
- 10 g psyllium husks
- 50 g golden linseed flour
- 35 ml water
- 1 egg
- 1/2 tsp. salt
For the Sauce:
- 100 g diced ham
- 1 onion
- 200 g mushrooms of your choice
- 200 g tomatoes
- salt & pepper
- 1 tbsp. herbs of your choice
- 100 g créme fraîche
For the Pasta:
- 1.7 oz sunflower seeds
- 0.3 oz psyllium husks
- 1.7 oz golden linseed flour
- 1.2 fl oz water
- 1 egg
- 1/2 tsp. salt
For the Sauce:
- 3.5 oz diced ham
- 1 onion
- 7.1 oz mushrooms of your choice
- 7.1 oz tomatoes
- salt & pepper
- 1 tbsp. herbs of your choice
- 3.5 oz créme fraîche
Directions
1.Prepare the dough for the low-carb noodles first. Use a coffee mill to grind the sunflower seeds and the psyllium husks.
Put the ground ingredients in a large bowl and add the golden linseed flour. Mix the dry ingredients.
Fill another bowl with the water and add the egg. Salt with 1/2 a teaspoon and mix everythring.
Now add the mix of dry ingredients to the water-egg mixture and knead carefully with your hands to make a smooth dough.
Place the dough on a wooden board and roll it out with a rolling pin. From time to time pick up the pastry and turn it over to avoid sticking.
Alternatively, you can place a sheet of parchment paper between the dough and the board. Then the dough is easy to peel off but the whole thing is a bit slippier 😉
Tip: To make it easier to flatten the dough, you can quarter it and roll out each quarter of the dough individually. This is much easier than to process the entire dough at once.
Cut your pasta from the flatt dough pieces. This works very well, for example, with a pizza cutter. Of course you can vary the length and breadth of the noodles according to your taste.
Cook the pasta in salted water for about 3 minutes and then drain. The low-carb pasta is ready.
The low-carb pasta only needs your favorite sauce or side dish to be perfect. In this recipe, we have a suggestion for your low-carb pasta, a delicious and creamy mushroom tomato pan.
To prepare the mushroom and tomato pan, fry the ham cubes, then add the diced onion, the mushrooms and finally the halved tomatoes.
Salt and pepper the bacon-vegetable mixture to taste and add the herbs and crème fraîche. Mix all ingredients until everything is evenly hot - done 🙂
Serve the low-carb pasta with you creamy mushroom tomato pan - enjoy!

Can flaxseed be substituted for linseed?

flaxseed and linseed are different names for the same seed, so the answer would be yes. 🙂
