(Low-Carb High-Quality) – The Low-Carb Lamb’s Lettuce with Goat Cheese is a super-simple but fantastically delicious salad! Refined with raspberries and sweet and spicy dressing, there is nothing left to be desired in terms of taste. Thanks to the avocado, this salad is – unlike many others – very filling and therefore very good as a dinner.

Ingredients

  • 100 g lamb’s lettuce
  • 1 avocado
  • 100 g goat cheese
  • 50 g raspberries (frozen or fresh)
  • pine nuts to taste
  • 6 tbsp. olive oil
  • 1 tbsp. xylitol (birch sugar)
  • 2 tbsp. balsamic vinegar
  • 1 tbsp. mustard
  • salt and pepper to taste
  • 3.5 oz lamb’s lettuce
  • 1 avocado
  • 3.5 oz goat cheese
  • 1.8 oz raspberries (frozen or fresh)
  • pine nuts to taste
  • 6 tbsp. olive oil
  • 1 tbsp. xylitol (birch sugar)
  • 2 tbsp. balsamic vinegar
  • 1 tbsp. mustard
  • salt and pepper to taste

Directions

1.

Clean the lamb’s lettuce and distribute it on two plates. Halve the avocado, stone and peel and cut the avocado into thin strips. Mix the avocado strips under in the lamb’s lettuce.


2.

Spread the goat's cheese on top of the salad. Wash the raspberries and drain. Decorate the salad with the raspberries.


3.

Roast the pine nuts in a pan and also spread them over the salad.


4.

Thoroughly mix the olive oil, the xylitol, the balsamic vinegar and the mustard in a small mixing bowl. Season the dressing with salt and pepper to taste.


5.

Also distribute the mixed dressing over the salad. Enjoy!
