Ingredients
- 2 avocados
- 1 red onion
- 1 cucumber
- 2 limes
- 1 tbsp. erythritol
- salt & pepper
- ½ tsp. coriander (alternatively 1 bunch fresh coriander)
- 500 ml chicken stock
- lime slices & mint leaves for decoration (optional)
- low-carb bread (optional)
- 2 avocados
- 1 red onion
- 1 cucumber
- 2 limes

- salt & pepper
- ½ tsp. coriander (alternatively 1 bunch fresh coriander)
- 16.9 fl oz chicken stock
- lime slices & mint leaves for decoration (optional)
- low-carb bread (optional)
Directions
1.Halve the avocados and remove the core. Divide the avocado into quarters, remove the peel and roughly chop the pulp.
Cut the onion and cucumber into pieces and add them to the avocado in a bowl.
Halve and juice the limes. Add the juice to the other vegetables.
Add the Eryhtritol and season with the coriander and salt and pepper to taste, then add the chicken stock.
Puree everything into a fine soup and cool for about 2 hours.
Serve the soup in bowls and decorate it to your taste, e.g. with lime slices and mint leaves.
