The Low-Carb Fruity Ice Bears are the cold low-carb alternative to the classic gummy bears. You can either eat them ice cold or at refrigerator temperature – but then the bears are much softer than the original. We recommend the refreshing ice-cold version 🙂

Ingredients

  • 100 g strawberries frozen or fresh
  • 1 tsp. lemon juice
  • 125 ml water
  • 1 tbsp. erythritol
  • 4 sheets of gelatin
  • 3.5 oz strawberries frozen or fresh
  • 1 tsp. lemon juice
  • 1/4 pt water
  • 1 tbsp. erythritol
  • 4 sheets of gelatin

Directions

1.

Allow the strawberries to thaw slightly so the blender can handle them. If you have fresh strawberries available, then use them of course. Alternatively, this low carb recipe also works with other berries of your choice.

Put the strawberries in a mixing bowl. Add the water and lemon juice and sweeten with erythritol.

Purée the ingredients with a blender into a fine mash.

Add the sheets of gelatin and allow it to rest in the strawberry puree for about 10 minutes.

Heat the puree with the gelatine until it is completely dissolved.


5.

Fill the jelly into silicone molds with a pipette. Of course they do not have to be bear-shaped - let your imagination run wild.


6.

Cool the bears in the fridge for about 2-3 hours. Before serving, you can additionally put the teddy bears in the freezer for another hour. The frozen bears are much easier to remove from the molds.
