(Low-Carb High-Quality) – Today we present you our Faux Potato Salad with Eggs & Tomatoes. Since the potato does not fit in a low-carb diet, but we did not want to forgo our beloved potato salad at hot summer barbecue nights, we have developed a low-carb alternative to the classic potato salad. Simply replace the potatoes with kohlrabi and many carbohydrates have already been omitted.

  • 3 eggs
  • 4 cabbage turnips (kohlrabi)
  • 400 g sour cream 14%
  • 1 teaspoon mustard
  • 2 tablespoons water from the pickles
  • 1 teaspoon curry powder
  • 1 teaspoon paprika powder sweet
  • salt and pepper to taste
  • 150 g small tomatoes (e.g. cherry tomatoes)
  • 100 g pickles (unsweetened)
  • 100 g poultry sausage or boiled ham
  • 1 red onion
  • 3 eggs
  • 4 cabbage turnips (kohlrabi)
  • 14,1 oz sour cream 14%
  • 1 teaspoon mustard
  • 2 tablespoons water from the pickles
  • 1 teaspoon curry powder
  • 1 teaspoon paprika powder sweet
  • salt and pepper to taste
  • 5.3 oz small tomatoes (e.g. cherry tomatoes)
  • 3.5 oz pickles (unsweetened)
  • 3.5 oz poultry sausage or boiled ham
  • 1 red onion

Directions

Boil the eggs, then put them into cold water. Set aside.

Now prepare the cabbage turnip (kohlrabi). First, skin the tuber then cut it with a sharp knife into finger thick slices. Cook them in a large pot with sufficient water until they are firm to the bite. Pour the kohlrabi slices through a sieve and put them aside to cool.

While the kohlrabi slices are still cooking, you can cut the vegetables. If you have cherry tomatoes, just wash and half them, otherwise cut the tomatoes into small sizes accordingly. Cut the pickles into small slices and dice the poultry sausage. Same for the onion, peel and cut it into rings.

Remember the eggs? Quickly peel and quarter them and your preparations are nearly finished.

In the last step, mix the dressing for the faux potato salad. Simply mix the sour cream, the mustard, the pickle water, the curry powder and the paprika powder in a medium-sized bowl. Season with salt and pepper to taste and the salad dressing is ready. Mix everything and enjoy!
