Ingredients
- 400 g chicken breast
- clarified butter (ghee)
- 3 tbsp. olive oil
- 1 clove of garlic
- 1 tbsp. thyme
- 1 tsp. marjoram
- 1 tsp. oregano
- 1 red onion
- 250 g tomatoes
- 20 g pine nuts (roasted)
- 2 tbsp. fresh basil
- salt
- pepper
- 14.1 oz chicken breast
- clarified butter (ghee)
- 3 tbsp. olive oil
- 1 clove of garlic
- 1 tbsp. thyme
- 1 tsp. marjoram
- 1 tsp. oregano
- 1 red onion
- 8.8 oz tomatoes
- 0.7 oz pine nuts (roasted)
- 2 tbsp. fresh basil
- salt
- pepper
Directions
1.Halve the chicken breasts lengthwise to get two pieces that are half as thick.
Sear the chicken breasts in some clarified butter (ghee) vigorously and then adjust the temperature to medium heat. Now add 2 tablespoons of the olive oil to the chicken, as well as the diced garlic clove, thyme, marjoram and oregano. Cook the chicken until it's done.
Now prepare the coating. Cut the onion and tomatoes into small cubes and add 1 tbsp of olive oil and about 1 tbsp. of chopped basil leaves. Season the tomatoes with salt & pepper to taste.
Add the onions and pine nuts to the tomatoes and then spread the topping on the chicken breast.
Garnish the Chicken Bruschetta with a few fresh basil leaves to taste.
