Ingredients
- 2 chicken breasts
- 400 g cherry tomatoes
- 1 globe buffalo mozzarella (250 g)
- 3 tbsp. olive oil
- salt & pepper to taste
- fresh basil to taste

- 14.1 oz cherry tomatoes
- 1 globe buffalo mozzarella (8.8 oz)
- 3 tbsp. olive oil
- salt & pepper to taste

Directions
1.Preheat oven to 160°C / 320°F (circulating air) or 180°C / 355°F (top / bottom heat).
Incise the chicken breasts at regular intervals and put the chicken breasts in a casserole dish.
Slice about a third of the cherry tomatoes and fill the cuts in the chicken breasts. Put the remaining cherry tomatoes in the casserole dish as well.
Slice the buffalo mozzarella and stick the slices next to the tomatoes into the cuts in the chicken breasts.
Season the casserole with salt and pepper to taste and sprinkle it evenly with the olive oil.
That's it! 🙂 Bake the casserole in a preheated oven for about 30 minutes.
Take the stuffed chicken breasts out of the casserole dish and place them on a plate. Divide the remaining tomatoes from the casserole dish on the plates. To complete the Low-Carb Chicken Breast Caprese, sprinkle fresh basil leaves all over it. Enjoy!
