Ingredients

For the dough:

  • 100 g ground almonds
  • 50 g sunflower seeds
  • 30 g ground chia seeds
  • 10 g psyllium husks
  • 1/2 tsp. baking soda
  • 250 g quark, 40% fat
  • 3 eggs

For the cheese-garlic cream:

  • 100 g crème fraîche
  • 3 cloves of garlic
  • 100 g spring onions
  • 100 g mozzarella in slices
  • 100 g grated cheddar
  • 1 tsp. oregano
  • salt
  • pepper

For the dough:

  • 3.5 oz ground almonds
  • 1.8 oz sunflower seeds
  • 1 oz ground chia seeds
  • 0.4 oz psyllium husks
  • 1/2 tsp. baking soda
  • 8.8 oz quark, 40% fat
  • 3 eggs

For the cheese-garlic cream:

  • 3.5 oz crème fraîche
  • 3 cloves of garlic
  • 3.5 oz spring onions
  • 3.5 oz mozzarella in slices
  • 3.5 oz grated cheddar
  • 1 tsp. oregano
  • salt
  • pepper

Directions

1.

Preheat oven to 160°C / 320°F (circulating air) or 180°C / 355°F (top / bottom heat).

Put the ground almonds, the sunflower seeds, the ground chia seeds, the psyllium husks, and the baking soda into a large bowl and mix the dry ingredients.

Mix the quark and eggs in another bowl with a hand mixer. Add the mixed dry ingredients and stir until a smooth dough is formed.


4.

Allow the dough to rest for about 10 minutes, then shape it on a baking sheet lined with parchment paper into a baguette shape.


5.

Bake the baguette in the preheated oven for about 35 minutes. Prepare the cream while the baguette is baking. Get a bowl and fill it with the crème fraîche.


6.

Chop the garlic, cut the spring onion into rings and the mozzarella into pieces. Add these ingredients and the grated cheddar, the oregano and some salt and pepper to taste to the bowl with the crème fraîche. Stir afterwards.


7.

Remove the baguette from the oven as soon as it's ready. Halve it and coat with the mixed cream.


8.

Bake the coated baguette again at 180°C / 355°F (circulating air) or 200°C / 390°F (top / bottom heat) until the cheese has melted and browned. Enjoy!
