Ingredients

  • 4 carrots
  • 5 tbsp. clarified butter (ghee)
  • 1 tsp. paprika powder
  • 1 tbsp. tarragon
  • salt & pepper to taste

For the spicy dip:

  • 100 g crème fraîche
  • 1 tsp. mustard
  • salt & pepper to taste
  • 1 tsp. xylitol (birch sugar)
  • 4 carrots
  • 5 tbsp. clarified butter (ghee)
  • 1 tsp. paprika powder
  • 1 tbsp. tarragon
  • salt & pepper to taste

For the spicy dip:

  • 3.5 oz crème fraîche
  • 1 tsp. mustard
  • salt & pepper to taste
  • 1 tsp. xylitol (birch sugar)

Directions

1.

Preheat oven to 200°C / 390°F (circulating air) or 220°C / 430°F (top / bottom heat).


2.

Halve the carrots and cut them lengthwise into sticks.


3.

Heat the clarified butter (ghee) until it becomes liquid.


4.

Then combine the liquid ghee with the paprika powder and the tarragon in a large bowl. Remember, season to taste with salt and pepper.


5.

Add the carrot sticks and mix with the marinade.


6.

Then spread the sticks on a baking sheet and bake for about 25 minutes in the preheated oven.


7.

In the meantime, prepare the dip for the carrot fries. Mix the crème fraîche, mustard, salt and pepper to taste and xylitol in a bowl until even.

Serve and enjoy!
