Ingredients

    For the crumbles:

  • 20 g butter
  • 20 g hazelnuts chopped
  • 20 g almonds chopped
  • 20 g almonds ground
  • 20 g erythritol

    For the blueberry mixture:

  • 200 g blueberries (frozen)
  • 30 g erythritol

    For the creme:

  • 250 g ricotta
  • 150 g Greek yogurt
  • 50 g xylitol (birch sugar)
  • ground vanilla

    For the crumbles:

  • 0.7 oz butter
  • 0.7 oz hazelnuts chopped
  • 0.7 oz almonds chopped
  • 0.7 oz almonds ground
  • 0.7 oz erythritol

    For the blueberry mixture:

  • 7.1 oz blueberries (frozen)
  • 1 oz erythritol

    For the creme:

  • 8.8 oz ricotta
  • 5.3 oz Greek yogurt
  • 1.8 oz xylitol (birch sugar)
  • ground vanilla

Directions

Preheat oven to 160°C / 320°F (circulating air) or 180°C / 355°F (top / bottom heat).

Start with the crumbles. Mix butter, hazelnuts, ground and chopped almonds and 20 g / 0.7 oz of erythritol in a bowl and knead into a coarse dough.

Spread the crumbles in the center of parchment paper. The dough should not form a coherent surface, but only form individual lumps.

Bake the crumbles for about 10 minutes in the preheated oven until they are browned. Then remove them with a spoon from the parchment paper and put aside.

Let's prepare the berry part: Mix the blueberries with 30 g / 1 oz of erythritol and cook the sweetened berries for about 10 minutes into compote.

For the cream: Mix the ricotta with Greek yogurt, xylitol and vanilla to taste and stir everything thoroughly.


7.

The blueberry ricotta crumble just has to be layered. Prepare two glasses and start by distributing the cream evenly between them.

Tip: This low-carb dessert is very filling. If you want, you can make up to 4 servings from this recipe.

Now place the blueberry compote on top and add the crunchy crumbles, which give this dish a special note.
