  • 3 tbsp. olive oil
  • 1 tbsp. thyme
  • salt to taste

  • 200 g Crème fraîche
  • optional tabasco or herbs of your choice

Directions

1.

Preheat oven to 180°C / 355°F (circulating air). It’s best to use a Hokkaido pumpkin for your baked pumpkin slices. In contrast to all other pumpkin varieties, the Hokkaido’s shell softens when cooked and can be eaten as well.

Wash the pumpkin thoroughly under cold water. Remove the stem at the top and cut the pumpkin in half once. Now you can easily remove the seeds with a spoon.

Cut the cleaned and pitted pumpkin into slices with a sharp knife. A really good, sharp knife helps you a lot, as especially the shell of a pumpkin is quite firm.

Spread the pumpkin slices on a baking sheet. In a bowl, stir 3 tbsp. of olive oil with salt, pepper and thyme. Pour the spiced olive oil over the pumpkin slices and mix thoroughly with your hands, so that the olive oil spreads evenly over all pumpkin slices.

Put the baking tray with the pumpkin in the oven for about 20-30 minutes until the slices reach the desired degree of browning.


6.

While the pumpkin slices bake, prepare the dip. In a bowl, stir the crème fraîche with salt and pepper until creamy. If you want, refine the dip with your favorite herbs or add some Tabasco.


7.

When the pumpkin slices have finished, serve and enjoy!
